Chris Ford’s four tips for becoming a celebrated chocolatier with a rising career
Chris Ford, IRCA’s ambassador in the USA, is one of his country’s most celebrated chocolatiers, thanks to his artistry and the distinguished list of illustrious clients of his firm ButterLove&Hardwork (BLHW), which includes Madonna, John Legend, Chanel, or Louis Vuitton.

1.- Look for difference and excellence

I never knew what I wanted to do, I just did what I loved and made me happy. I wanted to be the best in what I did, not what industry I was in, but what I did myself. I always wanted to do it differently and although at times that has been a curse, it is what got me where I am today. I am so proud of my body of work. The beautiful thing about life is that you get to keep achieving for as long as you want to.
2.- Stay true to oneself and be as creative as possible

I receive a lot of compliments on the creative aspect of my products. With this I also receive price point comments seeing as my product is highly handmade and not the everyday chocolate product.
The important thing is to continue to evolve in the way I have been for the last 20 years. Stay true to myself and be as creative as possible.
3.- Go for noble and pure flavors

Chocolate is a world of possibilities. And, for as wild and out there my presentations of desserts are, I am a purist at heart. I prefer no other flavor components, just the beautiful depth and aroma of a great ganache.
4.- Be aware of how technology changes the world of chocolate

I think a chocolate bonbon will always be with us, as it is a classic confection. With anything right now it will be interesting to see how technology changes the world of chocolate. On a recent trip to Vietnam, I had the chance to tour Dobla’s factory. Seeing how technology has evolved, they still retain that human element to five million chocolate garnishes. Very impressive.
