Danon, the new school in Israel, debuts with a course by Carles Mampel
Carles Mampel (so good #2, so good #8, so good #13) was the chef chosen to kick off the courses of the new gastronomy school Danon in Tel Aviv (Israel), directed by Mier Danon.
The head of Bubó, assisted by Alon Goldman (so good #8) and Lior Shtaygman, taught a week-long course to a small group of students in which he also shared his expertise and developed recipes for entremets, petits gateaux, and sablé tartlets, talked about sales systems, the introduction of new products and other issues related to the pastry sector.
A very positive experience for Carles, who says Danon has “two large rooms, one for cuisine and the other for pastry, fully equipped with large tables, refrigerators, several ovens, dipping machine and all the necessary equipment that a chef might need, in addition to the invaluable help of the professors and accompanying school”.
