Gerhard Petzl, who has been exploring the beauty of chocolate for 25 years, has published the book Chocolate Crystals: The soul of chocolate. It immerses us in a world of previously unexplored creations with naturally grown cocoa butter crystals, an essential ingredient of Premium chocolate.
In this book, the Austrian chef wanted to share part of his extensive private collection of chocolate crystals that began in 2010. It is the first book in a series that will explain his interest in this particular topic. As he explains, it all started when the chocolate tempering machine disconnected accidentally overnight and found a sea of crystals everywhere. From there he began to experiment, creating amazing art and 3D objects and product design: planet series, sunglasses, a concept for Porsche, summer sandals…
