India, in the training calendar of Carles Mampel and Antonio Bachour
So far this year, Antonio Bachour and Carles Mampel (so good #2, so good #8, so good #13) have taught numerous masterclasses separately and together all over the world: Madrid, Colombia, Bangkok … One of their last training stops, although on different dates, has been in India, a country that is increasingly interested in avant-garde pastry. The chosen scenario has been Lavonne Academy of Baking Science and Pastry Arts, where other internationally renowned chefs such as Andrés Lara (so good #5, so good #7, so good #15) or Nina Tarasova have visited in recent months.
In his intense demo, Bachour taught 70 pastry chefs from different countries skills and techniques to make simple recipes for cakes and sablés.
Meanwhile, Mampel focused on pastries, especially on the keys to a good croissant. His fun class was a magnificent pastry exercise understood as a perfect balance between science, logic and art.
