“Pomme” and “Puissance 10”, two new books by Christophe Adam
Two new titles are added to the long list of books written by Christophe Adam (so good # 5, so good # 13): Pomme and Puissance 10.
In Pomme, the man of the 1,000 éclairs wanted to pay tribute to the apple through 60 recipes in which this fruit appears in an infinity amount of textures: fondant, croucant, cream, liquid … There are classic creations such as tarte tatin and buñuelos, but also more risky ones such as the Hungarian apple soup. Creations in which great pastry chefs like Christelle Brua, Laurent Jeannin (so good #16), Benoit Castel, or Cédric Grolet have collaborated.
Meanwhile in Puissance 10, the owner of the innovative pastry shop, L’Éclair de Génie, combines his ten favorite ingredients for pastry with ten other products, resulting in 100 recipes that will delight any gourmand, and among which there are enticing dishes like the almond soup, mango cream, and whiskey-brown fondant.
