Asian and European patisserie face off at Iba UIBC CUP

Ana RodríguezTop pastry chefs from Asia and Europe are gathering in Munich in mid-September to participate at Iba UIBC CUP “Confectioners”. This event will be held within the framework of Iba, a fair renowned worldwide in bakery and other similar sectors, which this edition will welcome more than 1,200 exhibitors.
Four countries (Germany, Norway, South Korea, and Taiwan) will compete to win the gold medal. They will have two days to create a decorative sugar, chocolate, marzipan, and nougat piece or a combination of these ingredients, three different petits fours, three different caramel-coated almonds, two little statues, and a national specialty in which a cake must be integrated around a circus theme.
The award ceremony will take place on 17 September and, as Gerhard Schenk, vice president of the International Union of Bakers and Confectioners (UIBC) and President of the German Pastry Chef Association (BIV), explains, “Nothing may go wrong. The participants must be in perfect shape, just as high performance athletes have to be”. Perfect preparation is fundamental to win this competition.
