Ana RodríguezCédric Barrère and Margot Moura have won the 49th Championnat de France du Dessert in the professional and junior categories, respectively. Organized by Cultures Sucre, the competition took place on April 4 and 5 at the Lycée Hôtelier International in Lille, in the Haute-France region.
Hugues Pouget, president of the juries, asked the candidates to create a plated dessert for ten people around the theme “Authenticity”, without additives, artificial colors, or flavors. For the final, the candidates also had to prepare a second original dessert: a three-serve fraîcheur with blood orange sorbet with cardamom for the professionals, and a pavlova with French meringue for the juniors.
Barrère, sous-chef pastry chef at Maison Pic (Valence), seduced the jury with his Aqueras Montanhas dessert, the result of “my various meetings with Pyrenean producers and the support of the entire Maison Pic team. After hours and hours of training, this title is a real relief.
For her part, Margot, an apprentice at l’INFA Le Manoir à Gouvieux, prevailed in the junior section with her Nacimiento de Néroli. “This victory will allow me to continue to evolve and gain confidence,” she said.
