From February 27 to March 3, five regional semi-finals have been held to continue selecting the candidates who will participate in the C3 Valrhona grand finale, which will take place on October 22 in New York.

The winners of these last five regional classifications are:

• Italy: Ettore Beligni
• Scandinavia: Weilu Wang (Sweden)
• Rest of Europe: Paula Stakelum (Ireland)
• Spain: Libertad Santiago
• Middle East: Kanako Baba (United Arab Emirates)

Candidates who are joining Mina Pizarro, winner of the North American qualifier,  Cyril Gaidella, from France, who won the Championnat de France du Dessert 2017, and Yusuke Aoki, winner of the Asian Semifinal.
