Registration is now open for The World Trophy of Professional Tiramisù, a biennial championship organized by the International Federation of Pastry, Ice Cream and Chocolate (FIPGC) in which professional chefs, pastry chefs, and ice cream makers with a minimum of five years experience from all over the world can compete.

As stated in the rules, the deadline to submit the application form is October 15. Each applicant has to participate in the two categories established by the competition: classic tiramisu and innovative tiramisu. In the classic category, a 20 cm diameter portion that contains only mascarpone, cheese, eggs, sugar, savoiardi, cocoa and coffee must be made. Meanwhile, in the innovative section, the requirement is to make eight tiramisu cups (single portion) + 1 moke up with at least a baked base and at least one kind of cream.

The competition will take place on October 22, 2021 in the framework of Host Fiera Milano in Rho. The jury will evaluate each of the categories following different evaluation criteria. In the classic category, flavor will count 70% and the execution will be 30% of the score. In the innovator, flavor (50%), aesthetics (20%), execution (20%) and innovation (10%) will be valued. Three prizes will be awarded, as well as special distinctions: best classic tiramisu and best innovative tiramisu.
