La Maison Pierre Hermé Paris and the Relais Desserts Association organize Le Jour du Macaron every March to celebrate the arrival of spring in the most charitable way: fighting cystic fibrosis.

The mechanics are simple; the customer gives a donation to the association Vaincre la Mucoviscidose and in return, chooses a macaroon they would like to taste.

160 establishments belonging to Relais Desserts participated in 2015 and 50,000 euros were raised. There is no data for this year yet, but we already know of pastry chefs who are going to collaborate with surprising creations. For example, Pierre Hermé will present the Japanese garden collection, a box with seven macaroons made of morello cherry, lemon, and Tonka bean. Maison Bellanger will offer a mysterious macaroon, daring consumers to discover its ingredients. Christophe Roussel will donate his famous Tulameen raspberry macaroons and launching a new strawberry-passion flavor. Thierry Mulhaupt has created a very refreshing mojito macaroon for the occasion. Lastly, Vincent Guerlais will surprise with a yuzu vanilla raspberry macaroon, designed by the winner of the Macaron Amateur de Nantes competition, Olivier Chupin.
