François Perret is the winner of the 2019 Prize for Best Restaurant Pastry

Ana RodríguezFrançois Perret, pastry chef at La Table de l’Espadon au Ritz Paris, has received the 2019 Valrhona Prize for Best Restaurant Pastry of Les Grandes Tables Du Monde.
Created in 1954, Le Grandes Tables Du Monde is made up of 181 establishments in 25 countries that are ambassadors of a culinary excellence that moves between tradition, transmission, and innovation. With this same spirit, it announced last October 15 in Saint-Jean-Cap-Ferrat in the French Riviera the four winners of its awards for excellence (restaurateur, sommelier, pastry chef, and room manager), including Perret. These professionals embody the link between tradition and modernity in the gastronomic experience were selected by a panel of 50 international voters.
In the case of François Perret, the association highlights his expertise reproducing the classic French pastry in a contemporary version. Creations that play with “low sugar” to focus on the essentials.
