French-Japanese fusion in Kiyoka’s Chinese New Year and Valentine’s Day proposals

Ana RodríguezKiyoka, Asuka Matsubara’s French-Japanese pastry shop located in Hong Kong, launches limited sweet specials rooted in classic French pastry, while paying homage to her native Japan in both aesthetics and style.
To celebrate the Chinese New Year, which is ruled by the rabbit, the pastry chef, known for her precise technique, is presenting until February 4 a collection made up of Kumquat Strawberry tart and mini tart, and parmesan sablé in which she uses a recipe derived from her popular buttery, a French-style cookie from her tenure at two-Michelin-starred La Cime.
For Valentine’s Day, Matsubara launches an innovative new take on the chocolate lava tart from Kikoya. Infused with premium, seasonal black cherries, it is limited-edition and contains 67% Belgian dark chocolate, dark chocolate ganache, and Cointreau chocolate whipped cream.
