The Japanese chef Saori Sasaki wins the Relais Desserts Charles Proust 2022

Ana RodríguezOn September 18, the Relais Desserts Charles Proust 2022 was held at Le Paquebot des Yachts de Paris. This edition proposed Naturalité as a theme in order to raise awareness of the ecological impact that pastry making can have.
The candidates had to present an artistic piece in sugar & chocolate and an entremet that respected the environment, both in the choice of ingredients as well as in the processes used. Of all the contestants, Saori Sasaki -chef at the Tokyo pâtisserie school and the only female participant- won the first prize; Keita Tanaka, pastry chef at Japan Cake and Confection College, was ranked second, and Romain Bert, pastry chef at Vincent Guerlais, was third and honored with the taste award.
