As was the case in 2022, the title of Asia’s Best Pastry Chef 2023 by the World’s 50 Best Restaurants ranking has gone to a chef born in Singapore: Louisa Lim, Odette’s pastry chef.

Lim moved to Paris to study at the prestigious Le Cordon Bleu culinary school, where she had the opportunity to closely observe the passion, dedication, and respect that the French have for desserts.

During her stay in the French capital, she worked at celebrity chef Mathieu Pacaud’s restaurants Hexagone, Histoires, and Apicius, where she played a key role in creating a new dessert menu.

In 2018, Lim joined the team at Odette, the French fine dining bastion helmed by chef Julien Royer located inside the National Gallery Singapore, which took the No.1 spot in Asia’s 50 Best Restaurants in 2019 and 2020. At this establishment, she presents balanced desserts from surprising juxtaposition of contrasting flavors. Light creations in which she takes care of every detail.
