Perhaps because his parents were booksellers and this cunning animal appears in many emblematic books such as “The Little Prince”, or because growing up on the edge of the forest he might have met a fox or two, Yann considers it almost like an alter ego . With the fox he shares a free, wild, and playful spirit.
This ‘alter ego’ is present in the exclusive entremet that he has created for Valentine’s Day: In love with the coco. A creation in which, like its name suggests, the coconut is the protagonist: coconut dacquoise, coconut ganache, coconut streusel covered in milk chocolate, coconut caramel insert, all covered with a layer of milk chocolate, and two coconut praline foxes covered in milk chocolate.
For couples who are not big fans of coconut, the chef offers a wide range of entremets: Azteck for chocolate lovers, the popular Mont Blanc with blue vanilla from Reunion Island and chestnut cream with whiskey, Paris-Brest with crunchy choux pastry, savory hazelnut praline, and toasted hazelnut nougat, a Flan with blue vanilla cream, IsatisTart, which contains almond cream with toasted pecans and walnut praline, and fox-shaped praline bonbons.
