In this preparation, the chef proposes a version of the traditional and popular Mont-Blanc. The result is a delicate, heart-shaped entremet with chestnuts and vanilla as the main elements. It is made up of a cream covered with white chocolate, cream with chestnuts and fleur de sel, chestnut dough and mousse, vanilla, raspberry compote and biscuit with brown sugar that gives it that crunchy touch. And to top it off, a French meringue with which he makes a declaration of love for French pastry.
