Pía Salazar, best Pastry Chef in the World 2023

Ana RodríguezHalf a year after being named Best Pastry Chef in Latin America 2022 by the 50 Best Restaurants, Pía Salazar has been chosen Best Pastry Chef in the World 2023 by this same media ranking.
Born in Cuenca in the Ecuadorian Andes, Salazar has a deep appreciation for the products of her country, exploring a wide range of ingredients. At her restaurant Nuema (Quito), which she opened with Alejandro Chamorro in 2014, she mixes the sweet with the savory in desserts like leek with lemon verbena and tonka bean, white seaweed with black garlic and yeast, and orange blossom with cassava.
With this award, the pastry chef proves all those skeptical colleagues who questioned her when she proposed adding mushrooms to a dessert wrong at the beginning of Nuema, which this year has become the first Ecuadorian restaurant on the 51-100 list of the 50 best restaurants in the world
In previous years this title has gone to René Frank (2022), Will Goldfarb (2021), Jessica Préalpato (2019), and Cédric Grolet (2018).
