The Brazilian baker Rogério Shimura and the Swedish pastry chef Gustaf Mabrouk (so good #14) have been chosen by the International Bakery and Pastry Union (UIBC) as the 2019 global baker and pastry chef, respectively.

The organization has selected these two chefs after evaluating the final candidates, from Germany, Brazil, Iceland, Sweden, Switzerland, Taiwan, and Uruguay, based on parameters such as innovation, professional achievements, publications, participation in competitions and marketing work . “The result was very tight, since all applicants had excellent credentials,” says UIBC President Antonio Arias, adding that “choosing the best among professionals of such a high level is not an easy task, that’s why we want to congratulate everyone for the wonderful work they are doing in the bakery and pastry sector. ”

Shimura and Mabrouk will receive their awards at the 2019 UIBC Congress, which will take place in September in Russia. For the occasion, they will have to create a special bread recipe and an artistic piece or a dessert for the gala dinner. In addition, during 2020, their mission will be to promote the work of the UIBC in events and activities throughout the world.
