Trompe l’oeil and delicate individual pieces in Vincent Vallée’s Christmas

Ana RodríguezThe Vincent Vallée Christmas collection lacks nothing: entremets, chocolate figures, marrons glacés, gingerbread, and even an advent calendar. The French chef has taken advantage of the campaign to experiment and demonstrate his creativity.
Among all the launches, we highlight his New Year’s Magic entremet, presented in a box of champagne that is actually a Cameroon-origin chocolate trompe l’oeil which hides a dessert with the following elements: creamy vanilla tonka, Cameroon-origin chocolate mousse, orange confit, fleur de sel caramel, chocolate sponge cake, and crunchy hazelnut praline.
Within the individual pastry section, we find some delicate and beautiful decorations: Freshness (light Bourbon vanilla mousse, calamansi cream, almond cake, crunchy almond, and covered in white vanilla chocolate), Pecan (chocolate mousse with 60% hazelnuts, walnut coulant praline, chocolate cake, walnut praline, chocolate glaze, and Cameroon dark chocolate couverture) and Ruby (blackcurrant foam, lychee and rose raspberry confit, lemon sponge cake, lemon crunch, and Ruby chocolate couverture with spicy and fruity notes).
