With more than 30 years of experience within Maison Wittamer, he is the responsible for the workshop of this century-old chocolate and pastry shop in Brussels. His work focuses, firstly, on ensuring that the most emblematic specialties of the house retain the spirit which generations of customers who come to the shop enjoy in these products, as they remembered them from their childhood. The difficult balance between this maintenance of Wittamer’s foundational spirit and the necessary adaptation to new times and concerns of the consumer (reduced sweetness, fats, etc.) is one of his most delicate tasks.
