One of the great sensations of modern pastry in France, his brilliant training has led him through great experiences in emblematic places in Paris such as the Shangri-la, George V, Le Meurice, or the Four Seasons. A path that culminated as head pastry chef at the Ritz Hotel and from which he has consolidated his style and influence, earning all kinds of recognition. He has also taken the opportunity to write a book about the Ritz pastry shop or to adapt the sweets of the palace to the logic of an American food truck in a fun Netflix series. In 2021, he opened Le Comptoir patisserie, attached to the Ritz hotel itself. There this chef continues to display his talent and unique style in a repertoire of cakes and viennoiserie where the assortment of colorful madeleines, desserts in the form of drinks, or the classic croissant, pain au chocolat, among others, stand out, but in original elongated formats.
