Although Heather Kaniuk reaches the pages of So Good at the helm of a personal artisan doughnut project, Longboys, her professional career has taken her through the most diverse places, from her native New Zealand to her current residence in London, passing through the United States or even the culinary direction of a luxury yacht company. Awarded and recognized on various occasions in the British pastry scene, she has managed to move from savory cuisine to patisserie and run high-level establishments, such as the Shangri-la Shad or the Mandarin Oriental Hyde Park. It is during her penultimate stage in the Hakkasan Group that she comes into contact with chef Graham Hornigold, with whom she founded the Smart Pâtisserie consultancy and started Longboys, her original and gourmand collection of doughnuts in an elongated format.
