At only 34 years old, Australian chef Jo Barrett has just opened her own restaurant called Little Picket which focuses on localized food systems, has written a book, published her own magazine, and has even received an award for designing her own bakery knives.
This chef is convinced that climate change can be alleviated by the way you eat and cook. At her restaurant, she only uses local ingredients and changes the menu every week. “We make everything in-house from breads, cheeses, charcuterie, pastry, and butchery”.
