Roberto Cortez, or Bobby Cortez, has a strong background in the best schools (Le Cordon Bleu, Lenotre, Bellouet Conseil) , but it was with great masters such as Albert Adrià and Pierre Hermé when he discovered a sweet new language which led him to develop a more innovative outlook towards desserts. He has worked as a chef for celebrities (Antonio Banderas, Eddie Murphy) and currently directs CR8, lately in Seattle, where he works on new concepts and gastronomic experiences. He also exhibits his creations in some American art galleries.
