Prickly pear, the new flavor of frozen fruit puree from Les Vergers Boiron

The French firm Les Vergers Boiron presents a frozen prickly pear fruit puree, without added sugar, with vegetal and red fruit notes.

The prickly pear, grown in the Peruvian mountains by communities of small producers, is harvested by hand between October and March. In frozen fruit puree format, it has an intense fuchsia color, a soft and slightly pulpy texture, and provides a sensation of freshness in the mouth.

One of its great advantages is its versatility. Its use is designed for professionals from different disciplines, from chocolate, pastry, and ice cream, to restaurants, hotels, and beverages. Its optimal applications are pastry creams, jams, sorbets, fruit pastes, cremeux,  and cocktails.
